How to Make Sabudana Pancakes -
Ingredients
Sabudana – 1 cup (soak for 2 hours and rinse thoroughly)
Boiled and mashed potato or sweet potato – 1
Grated paneer – 1 cup
Green coriander – a handful (finely chopped)
Green chili – 1 (finely chopped)
Ginger – a small piece (finely chopped)
Roasted peanuts – a handful (crushed)
Salt – 1 teaspoon (fasting rock salt is best)
Black pepper – 1 teaspoon (ground)
Ghee or oil – for frying
Method
Step 1: Prepare the sabudana
First, take 1 cup of sabudana and soak it in water for 2 hours. Then, drain and rinse thoroughly to remove any stickiness and make the sabudana light and soft.
Step 2: Mix the Potato and Paneer
Now, put the sabudana in a large bowl. Add one boiled and mashed potato or sweet potato. Add 1 cup of grated paneer. This mixture will help bind the pancakes and enhance their flavor.
Step 3: Add Flavoring
Now, add a handful of chopped coriander leaves, one green chili, and finely chopped ginger. These will add a slight spiciness and fresh flavor to the pancakes.
Step 4: Peanuts and Spices
Lightly roast and crush a handful of peanuts and add them to the mixture. Peanuts make the pancakes crunchy and healthy. Add 1 teaspoon of rock salt and 1 teaspoon of black pepper and mix well.
Step 5: Prepare the Dough
Mix all the ingredients and knead them into a dough. Roll them into small balls and then press them into pancakes with your palms. If desired, you can apply a little ghee or oil to grease your hands.
Step 6: Bake in the Pan
Heat a non-stick pan and pour a little ghee into it. Bake the pancakes until golden and crisp on both sides. Cook each pancake for about 2-3 minutes.
Serving Suggestion
Serve hot sabudana pancakes with yogurt, green chutney, or mint-coriander dip. You can also eat them with fruit salad or coconut chutney.
